The ingredients can be tailored to what you have in your freezer/pantry and what you just like. Also, don't worry about sauteing the vegetables if you don't have time; you can just dump everything into the crock pot and let it go!
Ingredients I most often use:
In the saucepan, put in butter and olive oil. Saute 1/2 a onion, diced and with 1/2 tbsp sugar sprinkled on top, until translucent. Add a garlic clove. Add some spices--I like: 1 tbsp parsley, 1/2 tsp sage, 1/2 tsp rosemary, 1 tsp salt, 1 tsp pepper. Add a few chopped carrots. Add 5-6 potatoes (red, yellow, gold, whatever). Let that cook for a while, until the potatoes get a nice color on them.
Next, sprinkle paprika (about 2 tsps) around the pan. Add some corn and green beans. Cook about 5 minutes and then add enough chicken broth to fill the pan halfway. If your pan isn't big enough, go ahead and dump the saucepan in the crock pot and then add the broth (usually about 3 cups). If your pan is big enough, turn up the heat to medium high and cook another 5 minutes.
In the crock pot, dump in a can of each--cream of mushroom, chicken, and celery. Add 2 tbsps cream cheese, 1/4 cup sour cream. Add the chicken--I usually just cut up an pre-cooked roasted chicken. That's easiest & adds some flavor.
Dump your saucepan into the crockpot and stir everything together. Let that cook on low a couple of hours and then add some peas. (I don't like mushy peas.) Sprinkle the top with Parmesan cheese and let it cook a couple more hours on low. Taste after you add the Parmesan to be sure it doesn't need more salt or pepper.
Throw a biscuit on top & serve! You can put this all in a casserole dish and make a crust, if you have time. That's definitely better, but who has time to make a crust? That version was pre-baby!
